An enormous variety of flavors and textures are the bases of Thai cuisine. One may, at the same table, experience at one end of the spectrum a blend of cool mild flavors and at the other a pungent explosion of fire and spice, all brought together in delicious melange absolutely unique to Thai dining. You might in one dish enjoy crispy tender bamboo shoot slices, plump pink shrimp and succulent white chicken breast meat simmered in rich chicken stock made opaque with coconut milk combined with the unique citrus flavored lemon grass. Another dish might boast a freshly caught fish delicately flavored with lime laced with the likes of ginger and coriander (cilantro) other dishes use cumin, nutmeg, curry, basil, mint, cloves or bay leaves. All of these flavors will emerge from our kitchen at one time or another and we regard the proper combination of these ingredients to be the highest of the culinary arts. Not all are familiar with the reputation of the Asian chilies or 'prig' as the Thai call them (they also have interesting nicknames for the hottest of them). There are no fewer than 10 types of chilies, ranging from the serenely mild to the searingly hot. Important as they are, chili peppers and the more pungent spices constitute only a minority of the many ingredients which the Thai chefs use to create their delectable delights. Here at the -you may have your favorite dishes brought to you as spicy or as mild as you wish simply tell your server how you'd like the dish prepared from (1) very mild to (10) zowwie. Keep in mind that a ten represents the hottest the chefs can make the dish NOT as hot as you might be able to endure. The effects of some Thai chilies is accumulative and can have you begging for mercy after a few minutes have passed.
